Ingredients

  • 1/2 cup creamy peanut butter
  • 1/4 cup tamari
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 2 teaspoons honey
  • 3 tablespoons warm water, as needed
  • 8 ounces soba noodles
  • 1 cup seeded and sliced bell peppers
  • 1/2 cup cooked, shelled edamame
  • 1 teaspoon sesame seeds

Directions

Combine peanut butter, tamari, vinegar, oil and honey in a small bowl. Whisk until smooth, adding water to thin and achieve desired consistency.

Cook noodles according to package directions in salted, boiling water. Drain noodles and rinse briefly under cool water.

Toss noodles with peanut sauce, bell peppers, edamame and sesame seeds. Serve warm or cold.
