- 1 (14-ounce) can unsweetened coconut milk
- 6 tablespoons chia seeds
- 5 tablespoons (or less) maple syrup, honey, or agave nectar
In a small bowl or large jar, stir together the coconut milk, chia seeds and your choice of sweetener.
Chill in the refrigerator for at least 4 hours or until the chia seeds puff and expand. Pudding may be stored in an airtight container in the refrigerator for up to 3 days.
