Ingredients

  • 2 grass-fed sirloin steaks, cut about 1-inch thick
  • Salt, to taste
  • Freshly ground black pepper, to taste

Directions

Preheat a gas grill to 550°F or prepare a charcoal grill to high heat. Season steaks with salt and pepper on both sides.

Place steaks directly on the grill grate and cover grill. Cook for about 5 minutes and flip steaks. Replace grill cover and let them cook for 2 to 3 minutes more.

Check the interior temperature by lifting steak from the grill with tongs and inserting an instant read thermometer into the side, right into the center. For medium-rare the thermometer should read 130°F to 135°F. Cook for a few more minutes, as needed, to reach your desired level of doneness.

When steaks are done, remove to a platter and loosely tent with parchment paper or foil. Let steaks rest for 5 to 7 minutes. Serve whole or carve into slices at a slight angle.

Finish with a sprinkle of salt and pepper, to taste.
