Bulk spotlight: nuts and seeds

Buying in bulk means you can go nuts over our close to two dozen varieties of delicious nuts and seeds, including flavored mixes, cashews, and sunflower seeds, then eat them at their height of freshness by purchasing just what you need. Here are three great picks for summer snacking.

 

Pumpkin seeds

Not only are these raw pumpkin seeds plump and a beautiful shade of dark green but they’re certified organic and grown in Oregon. To roast, spread them on a cookie sheet and bake at 325° F for about 25 minutes. Then toss together our Massaged Kale Salad with Pumpkin Seeds and Sesame Oil.

Almonds

Our almonds hail from the Equal Exchange cooperative, where one family farm grows our entire crop. By purchasing these almonds, we’re helping the farm to transition from conventional to organic. Try our Grilled Organic Apricots with Smokey Blue Cheese and Almonds.

Peanuts

Locally roasted in small batches in Port Townsend, Wash., CB’s peanuts offer phenomenal flavor. These also are the nuts used in our grind-your-own peanut butter. Sprinkle these little gems over our Asian Chicken Lettuce Wraps.

 

Store ’em

Select nuts and seeds that are not discolored or wrinkled and store them in an airtight container in a dark, cool place away from sun exposure. A glass jar or plastic bag with the air removed works well; be sure to mark the date on the container. Refrigerating nuts will extend their freshness for months.
