  • 1/4 cup white or sherry wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon prepared mustard
  • 1 teaspoon horseradish (or more to taste!)
  • 1 teaspoon sugar
  • 1 teaspoon anchovy paste
  • 1 tablespoon chopped tarragon
  • Pinch of culinary lavender (optional)
  • Salt and freshly ground pepper, to taste
  • 1/2 cup extra virgin olive oil (or use half olive oil and half walnut oil)


Combine all of the ingredients except the oil in a bowl. Pour the oil into the vinegar mixture in a thin stream, mixing it with a wire whip, until well blended.
