- Yields: About 3/4 to 1 cup

Ingredients
- 1/4 cup white or sherry wine vinegar
- 2 cloves garlic, minced
- 1 teaspoon prepared mustard
- 1 teaspoon horseradish (or more to taste!)
- 1 teaspoon sugar
- 1 teaspoon anchovy paste
- 1 tablespoon chopped tarragon
- Pinch of culinary lavender (optional)
- Salt and freshly ground pepper, to taste
- 1/2 cup extra virgin olive oil (or use half olive oil and half walnut oil)
Directions
Combine all of the ingredients except the oil in a bowl. Pour the oil into the vinegar mixture in a thin stream, mixing it with a wire whip, until well blended.
