- 2 lemons, thinly sliced
- 1 small pineapple, peeled, cored and thinly sliced
- 1 cup white port
- 1/2 sugar
- 4 cups water
- 1 tablespoon green tea leaves, or 4 green tea bags
- 2 bottles sparkling wine
- 1 liter carbonated water
Place lemon and pineapple slices in a glass or ceramic bowl. Add port and stir gently. Let sit at room temperature while you make the tea.
Combine sugar and water in a saucepan and bring to a simmer over medium heat, stirring to dissolve sugar. Remove from the heat, add tea and stir. Let steep for 40 minutes. Use a fine-mesh strainer to strain loose tea or remove tea bags and pour tea into bowl of fruit. Cover bowl and refrigerate up to 24 hours.
When ready to serve, transfer to a 7-quart serving bowl. Gently stir in the sparkling wine and carbonated water. Serve chilled.
