Spicy Greens

  • 2 bunches Lacinato kale (also called dinosaur kale)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 2 tablespoons balsamic vinegar
  • Salt and pepper, to taste


Wash kale leaves and remove any tough stems. Do not dry, as water remaining on leaves helps to steam the greens. Gather a handful of leaves and slice on the diagonal into 1/2-inch-wide strips.

Heat olive oil in a sauté pan over medium heat. Add garlic and stir for 2 to 3 minutes.

Add kale and red pepper flakes. Cover. Cook for 5 to 7 minutes, stirring frequently to prevent burning. Add small amounts of cold water as needed.

Remove from heat and add vinegar, salt and pepper. Serve immediately.
