Roasted Pepper and Ricotta Cheese Spread with Garlic and Herbs

Ingredients

  • 1 cup whole milk ricotta cheese
  • 1/2 cup feta cheese
  • 1/2 cup finely chopped roasted red peppers
  • 2 tablespoons chopped chives or finely chopped green onions
  • 2 cloves garlic, minced
  • 1/4 cup finely chopped fresh dill
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup finely chopped pitted green olives for garnish

Directions

Combine all the ingredients, except olives, in a medium-size bowl and stir well. Chill about 1 hour. This can be made a day ahead and refrigerated.

Garnish with olives and serve with crackers, pita bread or French bread.
