Prime Rib of Beef

Ingredients

  • 1 bone-in rib roast (6 pounds or 1/2 to 1 pound per person, depending on appetites)
  • 1/2 cup coarse sea salt
  • 1/4 cup coarsely ground black pepper
  • 1/4 cup freshly minced garlic
  • 1/3 cup olive oil

Directions

Preheat oven to 325°F. Bring roast out of the refrigerator 1 hour before cooking.

Make a paste out of salt, pepper, garlic and olive oil. Place roast in a roasting pan without a rack and spread salt mixture over the top of the roast.

Place roast in the preheated oven and cook to 120° F for medium-rare, about 15 minutes per pound.

Remove from the oven and allow roast to rest for 30 minutes before carving, to come up to the final 130° F temperature. After resting, sear beef in a preheated 500° F oven for 5 to 10 minutes (optional).

Special notes:

USDA recommends a minimum internal temperature of 145°F.
