Pizza Dough

Ingredients

  • 3 cups warm water
  • 1 tablespoon sugar
  • 2 1/4 tablespoons yeast or 3 packages
  • 1 tablespoon salt
  • 6 or more cups unbleached flour

Directions

Combine water, sugar and yeast in a large bowl. Let stand for 15 to 20 minutes or until it foams. Add salt and stir. Add 4 cups flour and stir with a wooden spoon until combined. Add 1 to 1 1/2 more cups flour. Stir with a wooden spoon until you can’t stir anymore.

Put dough on a lightly floured surface and knead for about 10 minutes. While kneading, slowly add remaining flour, as needed – the dough should still be a little sticky and springy. Divide dough in half and place in two oiled bowls. Cover with plastic wrap and a kitchen towel. Let rise for about 1 hour or until it has doubled in size.

If using a standing mixer, add water, sugar and yeast to the mixing bowl as above. Add salt. Add 5 cups flour and mix at #2 speed for 1 minute. Add 1 more cup flour and mix. Add more flour, if needed, until dough separates from the bowl (dough should be almost sticky). Keep on #2 speed for 8 to 10 minutes.

Put dough on a lightly floured surface and knead a few times. Continue as above.
