Pear Tart

Ingredients

  • 4 tablespoons sugar, divided
  • 1 cup flour
  • 1/3 cup coconut oil
  • 4 tablespoons butter
  • 2 tablespoons ice water
  • 1 egg yolk
  • 2 tablespoons chopped hazelnuts
  • 4 Bartlett pears - peeled, cored and sliced
  • 1 lemon, zested and juiced
  • 1/4 teaspoon ground cardamom
  • 2 tablespoons fruit jelly

Directions

Preheat oven to 350º F.

In a food processor, combine 2 tablespoons sugar, flour, coconut oil and butter. While processing, slowly add ice water until dough forms. Press into an 8-inch square pan. Brush lightly with 1 beaten egg yolk and pierce several times with a fork.

Sprinkle chopped hazelnuts evenly over crust. Toss pears with lemon zest and juice. Arrange pear slices over hazelnuts. Combine remaining 2 tablespoons sugar and cardamom; sprinkle over pears.

Bake for 30 minutes. Remove from the oven and brush with fruit jelly.
