Ingredients

  • 1 large onion, coarsely chopped
  • 2 tablespoons high-heat oil
  • 3 bunches fresh spinach - washed, dried and coarsely chopped
  • 2 tomatoes, coarsely chopped
  • 1 teaspoon curry powder
  • Salt and black pepper, to taste
  • 1 cup water
  • 1/4 cup creamy peanut butter
  • Steamed couscous, for serving

Directions

In a heavy-bottomed pot or large fry pan with a lid, sauté onions in oil over medium heat until soft. Add spinach, tomatoes, curry, salt and pepper. Cover and cook for about 5 minutes.

Add water and stir in peanut butter. Lower heat and cook for another 10 minutes. Serve with steamed couscous.

Special notes:

Use natural, puréed peanut butter; no sugar or salt.
