As part of our Community Table series, PCC partners Tortillas Con Madre have shared their love of local, organic food with these easy fritters that start with their tortillas. Fried until golden brown and topped with crunchy cinnamon and sugar, these crispy Mexican pastries are a special treat!
Ingredients
- 2 cups vegetable oil (for frying)
- 1/2 cup white sugar
- 1 1/2 teaspoons ground cinnamon
- 10 Tortillas Con Madre flour tortillas
Directions
In a large pot or skillet, add at least one inch of oil and heat over medium-high (350° F if using a thermometer).
While the oil is heating, combine the sugar and cinnamon in a shallow dish and set aside.
Fry tortillas for 2 to 3 minutes, flipping every 15 seconds, until golden brown and crisp through.
Remove from oil and let the excess oil drip back into the pan. Immediately dredge or sprinkle tortilla with cinnamon-sugar mix. Serve immediately.
