Easy Breakfast Frittata

  • 8 large eggs
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ cup milk or cream
  • ½ cup feta cheese, crumbled
  • 2 tablespoons butter or high-heat oil
  • ¼ cup diced red onions
  • ½ cup diced red bell peppers
  • 2 teaspoons tamari
  • ¾ cup cubed ham
  • 1 cup spinach leaves


Preheat oven to 350° F.

In a mixing bowl, lightly whisk the eggs, salt, pepper and milk; mix in the feta.

Melt the butter over medium heat in a large ovenproof skillet. Add the onions, peppers and tamari; cook for about 5 minutes, until the onions are softened. Add the ham and cook until heated through, about 5 minutes. Add the spinach and mix until wilted. Pour the eggs over the vegetables and ham and shake the pan to combine and get the eggs to evenly spread. Increase the heat to medium-high, and cook for 2 minutes. Use a spatula around the edges to let the uncooked egg slide down the sides, then place the skillet in the oven.

Bake for about 15 minutes, until the eggs have set and cooked all the way through. Serve immediately!
