Ingredients
- 4 chipotle peppers in adobo sauce (from a 7-ounce can)
- 2 teaspoons fresh lime juice
- 1 cup mayonnaise
- 2 tablespoons cilantro stems, chopped
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
Directions
In a food processor or a blender combine chipotles, lime juice, mayonnaise, cilantro, salt and pepper. Blend until aioli is smooth.
Taste and adjust with salt, pepper and lime juice if needed. Serve immediately or refrigerate for up to one week.
