Spring deli favorites

Take a break from kale with the welcome crunch of spring vegetables. The PCC Deli changes some dishes seasonally, to make sure every meal is appealing. You’ll find these favorites in the case all month.

 

Veggie Collard Wrap

A happy combination of both salad and sandwich, a sturdy collard leaf functions as the “wrap” here. Inside, you’ll find rich, creamy hummus and avocado alongside cucumber, bell peppers, lettuce and red onion.

Asparagus and Orzo Salad

Terrific as a light lunch or a side dish at dinner, this pasta salad has a Mediterranean feel from feta, kalamata olives and herbs de Provence. They all serve to highlight the fresh crunch of blanched asparagus.

Quiche

The quality of our freshly-baked quiche is consistently top-notch. The base of savory custard is made with half-and-half and cage-free eggs, gently blended with flavorful vegetables, rich cheeses and quality meats.

Greek Salad with Fresh Mint
