Spicy Tomatillo Salsa

Ingredients

  • 1 pound tomatillos, outer shells removed
  • 2 jalapeños
  • 1 medium avocado
  • 2 cloves garlic
  • 1 teaspoon kosher salt, plus to taste
  • Juice of 1/2 lime (optional)

Directions

Preheat oven to 350°F. Using a cast-iron skillet or other pan, char the tomatillos and jalapeños on high heat, getting a nice black char on as many sides as possible. Once charred to your liking, place the skillet with the vegetables in the oven and bake until the tomatillos are soft and have changed to a yellowish green, 5 to 10 minutes. Remove from the oven and let cool slightly. Remove the stems of the jalapeños, but keep the seeds for a spicy salsa. In a blender, add the tomatillos and jalapeños with the avocado, garlic and salt. Blend until smooth. Taste and adjust the seasoning as necessary. If you like your salsa more acidic, add lime juice and blend again.
