Prosciutto Pesto Panini

  • 1 loaf focaccia or ciabatta bread, halved lengthwise
  • 1/2 cup prepared basil pesto
  • 1/2 pound thinly sliced prosciutto
  • 1/4 red onion, sliced
  • 8 ounces roasted red bell peppers
  • 2 cups baby arugula
  • 1/4 pound sliced mozzarella cheese


Spread both sides of bread with pesto. Layer one side of bread with prosciutto, onions, peppers, arugula and cheese; top with remaining bread. Cut sandwich into quarters and serve.
