Ingredients
- 1/2 to 1 pound small red potatoes, cut into quarters
- 1/4 pound fresh green beans, trimmed and cut into 1-inch pieces
- 2 tablespoons cider vinegar
- 3 green onions, chopped
- 1 clove garlic, pressed
- 1/4 cup olive oil
- Salt and pepper, to taste
Directions
Place potatoes in a large pot of water, bring to a boil and cook until tender, 7 to 8 minutes. During the last minute or so of cooking, add green beans to blanch. Drain in a colander and run under cool water to stop the cooking.
Place potatoes and green beans in a bowl and sprinkle with cider vinegar. Toss with remaining ingredients and taste for seasoning. Chill until ready to serve or serve warm.
