- 3 English cucumbers, chopped
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 green bell pepper, diced
- 1 pint cherry tomatoes, chopped
- 1 bunch green onions, chopped
- 1/2 pound Israeli feta cheese, cubed
- 1/2 bunch parsley, chopped
- 1/3 cup lemon juice
- 1/3 cup olive oil
- Salt and pepper, to taste
Combine prepared vegetables and feta in a large bowl. Mix lemon juice and olive oil in a separate bowl. Toss lemon-oil mixture with vegetables, salt and pepper.
