- 2 cups quartered tomatoes
- 2 tablespoons olive oil
- 1 teaspoon minced garlic
- 1 teaspoon balsamic vinegar
- Salt and pepper, to taste
Preheat oven to 425° F.
Toss tomatoes with olive oil, garlic, vinegar, salt and pepper. Roast until lightly browned, 12 to 15 minutes.
