  • 1/2 cup red wine vinegar
  • 3/4 teaspoon minced garlic
  • 3/4 teaspoon sea salt
  • 3/4 teaspoon Dijon mustard
  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried mint
  • 1 cup safflower, canola or sunflower oil
  • 1/4 cup olive oil


Mix everything together, except oils, in a bowl. Using a hand whisk or immersion blender, slowly drizzle oils into vinegar mixture, blending continuously to form an emulsified dressing.
