- 1 serrano chile pepper, or to taste
- 2 tablespoons granulated sugar
- 2 cloves garlic
- 2 tablespoons fish sauce
- 2 tablespoons fresh lime juice
- 1 tablespoon white distilled vinegar
- 1/2 cup plus 2 tablespoons water
Use a mortar and pestle to grind serrano chile pepper, sugar and garlic into a paste. Transfer the paste to a glass bowl. Add fish sauce, lime juice, vinegar and water. Stir well. Set aside for 10 to 20 minutes before serving.
