Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat pastry flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • Up to 2 teaspoons blended spices of your choice (optional) (see note)
  • 1 cup buttermilk
  • 2 eggs
  • Up to 2 tablespoons citrus zest (optional) (see note)

Directions

Preheat oven to 375° F. Grease and flour a 9- by 5-inch loaf pan.

In a large bowl, whisk together all-purpose flour, whole wheat pastry flour, baking powder, salt and spices of your choice.

In a separate small bowl, whisk together buttermilk and eggs, adding citrus zest if you’re using it. Pour wet ingredients all at once into the dry, and stir with a broad spatula only until mixed. Lightly blend in any nuts, fruit, chocolate or cheese. Pour batter into prepared pan; sprinkle with optional garnish.

Bake until the top is golden brown and a cake tester comes out clean, 55 to 60 minutes. Cool in the pan for 20 minutes, then remove from the pan and cool completely before slicing.

Special notes:

Try these flavor options, or invent your own: up to 1 cup nuts, dried fruit or chocolate chips; up to 1/2 cup grated cheese; 2 tablespoons pesto; garnish with slivered almonds, chopped peanuts, grated cheese or demerara sugar.

Match the spices and citrus zest to what options you plan on including; classics are almond-poppyseed, orange-chocolate chip, chili flakes and cheese, and pecan-dried cranberry.
