Maple-Glazed Holiday Ham

Ingredients

  • 1 bone-in spiral sliced ham, about 8 to 9 pounds
  • 1/3 cup maple syrup
  • 1/4 cup dark brown sugar
  • 2 tablespoons coarse ground mustard
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon black pepper

Directions

Preheat oven to 325° F.

Place ham in roasting pan and loosely tent with foil. Bake until the internal temperature is 140° F, about 1 1/2 to 2 hours.

While ham is heating, prepare the glaze. In a small saucepan, stir together the maple syrup, brown sugar, mustard, cinnamon, allspice, cloves and pepper. Place over medium heat and bring to a simmer. Cook, stirring frequently, until the bubbles become small and even and the mixture thickens slightly, about 2 to 3 minutes. Remove from heat. The glaze will thicken as it cools.

30 minutes before the ham is ready, remove it from the oven and brush generously with the glaze. Place it back in the oven, increase the temperature to 350° F and continue cooking, uncovered, for 30 minutes. You may add another layer of glaze after the ham comes out of the oven for more gloss, if desired.

Let ham rest 10 to 15 minutes before carving.

Special notes:

To increase the depth of flavor, buy whole cinnamon sticks, allspice berries and clove buds in PCC’s bulk spice section and grind them in a coffee grinder or spice mill. You’ll be amazed at the difference freshly ground spices make!
