  • 2 tablespoons Vegenaise or mayonnaise
  • 1 tablespoon olive oil
  • 1 teaspoon red wine vinegar
  • 1 teaspoon dried basil
  • 1 small clove garlic, minced
  • 1 teaspoon Dijon mustard
  • 2 teaspoons fresh lemon juice
  • Pinch of sugar
  • Salt and pepper, to taste
  • 1 head romaine lettuce, chopped
  • 1/2 cup chopped dry salami
  • 1 cup garbanzo beans, drained and rinsed
  • 1/2 red onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 cup grated mozzarella cheese


To make the dressing, place mayonnaise, oil, vinegar, basil, garlic, mustard, lemon juice and sugar in a lidded jar and shake vigorously. Season with salt and pepper.

To make the salad, combine lettuce, salami, garbanzo beans, onions, peppers and cheese in a large bowl and toss with dressing to coat evenly.
