Huevos Rancheros Breakfast Burrito

  • 1 sprouted wheat tortilla
  • 1/4 cup prepared seasoned black beans, heated
  • 1 egg, scrambled
  • 1/2 tomato, diced
  • 2 tablespoons shredded cheddar cheese


  • Salsa
  • Sour cream
  • Diced avocado
  • Steamed or sautéed greens


Over medium heat, warm tortilla in a cast-iron pan for about 1 minute to soften. Remove from the heat and spread with beans, egg, tomatoes and cheddar. Add any desired optional ingredients, then wrap and serve.
