Garlicky Mashed Cauliflower

  • 1 head cauliflower, cut into florets
  • Salt, to taste
  • 1/4 cup roasted garlic cloves, minced
  • 2 tablespoons cream cheese
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon butter
  • Pepper, to taste


Place cauliflower in a large pot with enough cold water to cover; salt water to taste. Bring to a boil and simmer until tender, 5 to 7 minutes. Drain cauliflower and return to the pot. Shake over medium heat to evaporate any remaining liquid.

Pass cauliflower through a ricer or mash. Stir in garlic, cream cheese, Parmesan, butter and season with salt and pepper.
