- 6 ounces silken tofu
- 1/4 cup fresh citrus juice (combination of orange, lime, tangerine, etc.)
- 1 tablespoon chopped fresh herbs
- 2 tablepoons olive oil
- 2 tablespoons rice vinegar
- Salt and pepper, to taste
Blend all ingredients in a blender. Adjust seasonings as necessary. Add water or vegetable stock to thin to your specifications. Let flavors marry for 1 hour. Toss with salad.
