Chile-Scallion Relish

  • 1 cup rice wine vinegar
  • 5 cloves garlic, peeled
  • 1 tablespoon honey
  • 1/2 pound mixed fresh red and orange fresh chiles, chopped
  • 1 star anise pod
  • 1 scallion (green onion), roughly chopped
  • Salt, to taste


In a small stainless sauce pot bring vinegar and garlic to a simmer; cook until garlic is just soft. Stir in honey, chopped chilies and star anise. Remove from the heat and cool completely.

Remove star aninse from chile mixture and place mixture in the bowl of a food processor; add scallions. Pulse until roughly chopped; season with salt.
