Braised Chard With Garlic

Ingredients

  • 1 pound chard (about 8 cups)
  • 1 tablespoon ghee or coconut oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • Lemon wedges

Directions

Wash greens thoroughly by rinsing in lots of lukewarm water. Drain and chop greens into 3-inch pieces.

Heat oil in a large saucepan set over medium heat. Sauté garlic for 1 minute, until pale gold, then add greens. (They do not have to be dried off, as the water will evaporate during cooking.) Cover and cook over medium heat for 4 to 5 minutes, stirring once in awhile to coat all the greens with garlic and oil.

Sprinkle with salt and serve with lemon wedges.
