- 1/2 cup fresh blueberries, gently mashed
- 1 egg
- 1/4 cup unsweetened applesauce
- 3 tablespoons unsalted creamy peanut butter
- 2 1/2 to 2 3/4 cups oat flour (see note)
- 1/2 teaspoon salt
Preheat oven to 350° F.
Combine blueberries, egg, applesauce and peanut butter in a mixing bowl. Add flour and salt and mix until well combined. If the dough is too wet, add a little bit of flour.
Place the dough on a lightly floured surface and knead together. Roll it out to 1/4-inch thickness and use small cookie cutters to cut out desired shapes.
Place treats on baking sheets and bake for 25 to 30 minutes until treats are crisp and golden in color. Allow treats to cool before storing in an airtight container.
You may make your own oat flour by placing regular oats in a food processor and pulsing until they are the consistency of flour.
