Baked Squash with Lime Butter

  • 2 delicata or sweet dumpling squash
  • 3 tablespoons butter, softened
  • 1 tablespoon lime juice
  • Pinch of honey or sugar
  • 1 teaspoon chili powder
  • Salt and pepper, to taste


Preheat oven to 350° F. Rinse squash before cutting, then cut in half lengthwise and remove seeds.

Place squash cut-side down in a glass baking dish and add water to a depth of 1/4-inch. Bake, covered, 20 to 30 minutes, until fork tender.

In a small bowl, combine butter, lime juice, honey or sugar and chili powder. Blend well. If desired, season with salt and pepper. Spoon butter lime sauce into baked squash cavities and serve hot.
