Preparation

For kasha, dry-pan toast 1 cup groats for 5 mins. Saute 2 Tbl chopped onion & mushrooms in 1 tsp oil. Add groats, 2 cups liquid & a pinch of salt. Simmer covered for 10 minutes. Let rest 5 mins before serving. Fluff with a fork. For a creamy cereal, cover 1 cup raw groats with 5 cups liquid. Simmer covered for 15-20 minutes.

Yield: about 3/4 cup per 1/4 cup uncooked groats.
