Cauliflower Pizza Crust

Ingredients

  • 3 cups cauliflower florets (about 1 head)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup almond meal
  • 1 egg, beaten
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Olive oil, for drizzling
  • Pizza toppings of your choice (sauce, vegetables, herbs, meats and cheeses)

Directions

Preheat oven to 400° F. Line a baking sheet with parchment paper.

In a food processor, pulse cauliflower florets until they are the size of rice grains (alternatively, use a cheese grater).

In a large bowl, combine cauliflower, cheese, almond meal, egg, Italian seasoning, salt and pepper. Mix well. Drizzle with oil until the crust just clumps.

Spread cauliflower mixture onto the prepared baking sheet and press with your hands into the desired shape.

Bake until golden and crisp, 20 to 25 minutes. Remove from the oven and add your favorite pizza toppings. Bake again until warmed through, 5 to 10 minutes.
