Ingredients

  • 4 ounces ground beef
  • 1/2 teaspoon brown mustard seeds
  • Kosher salt
  • Freshly ground black pepper
  • 1 slice cheddar cheese, or substitute your favorite melting cheese
  • 1 burger bun or ciabatta roll
  • 1 teaspoon salted butter (if toasting your buns)
  • Your favorite condiments

Directions

Preheat your griddle or cast-iron pan over high heat.

Place the meat in a bowl and add the mustard seeds. Using your hands or a wooden spoon, mix the mustard seeds into the beef. Using your hands, form the beef into a ball and set aside. If you are toasting your bun, spread the butter on the bun then place it on the hot griddle for 30–60 seconds, or until golden brown. Prepare your preferred condiments.

Once the bun is ready, move the ground beef to the griddle and immediately press down firmly on it with a steak weight, press, or large flat spatula. Season generously with salt and pepper. Cook for about 2 minutes, or until the patties are well browned on the bottom and the tops are beginning to pale. Use a stiff metal spatula to scrape the burger off the pan, making sure to scrape up all the browned bits, and flip to cook the other side. Add your cheese immediately, then cook for an additional 2 minutes — but do not press on the burger once you’ve flipped it.

Before taking the burger off the griddle, test the temperature using an internal thermometer. We recommend cooking your burger to medium, or 140–145°F.

Place the burger on the bun and add condiments as desired.
