Ingredients
- 1 cup quinoa, rinsed well
 - 2 cups water
 - 1 tablespoon olive oil
 - 1 tablespoon lemon juice
 - 3 green onions, sliced
 - 3 tablespoons chopped mint
 - 1 teaspoon cumin
 - Salt and pepper, to taste
 
Directions
Place quinoa and water in a pot and bring to a boil. Cover and reduce heat to a simmer and cook for 10 to 15 minutes. Remove from the heat and cool on a baking sheet.
In a bowl, mix olive oil and lemon juice into quinoa. Add green onions, mint, cumin, salt and pepper; mix well.
