Grilled Garlic-studded New York Steaks

Ingredients

  • 1/4 cup olive oil
  • 1 teaspoon coarse salt, or to taste
  • 1/2 lemon, zested
  • 1 teaspoon coarsely cracked black pepper
  • 4 (3/4-inch-thick) New York strip steaks, about
  • 4 to 6 cloves garlic, peeled and slivered

Directions

Combine oil, salt, lemon zest and pepper. Rub paste over steaks. You may let the steaks marinate in this mixture up to overnight.

With the tip of a paring knife, cut about 6 to 8 slits into the meat and insert a sliver of garlic into each one. Brush each steak with a little olive oil and grill over hot coals or a hot gas grill, or use a grill pan (preheated over medium-high heat).

Cook steaks about 6 to 8 minutes per side for medium-rare. The internal temperature will be 130º F for medium-rare.
