- 2 apples, chopped
- 2 pears, chopped
- 4 medjool dates, pitted and chopped
- 2 cinnamon sticks
- ⅛ teaspoon ground cardamom
- ½ vanilla bean, seeded
- Pinch of sea salt
- ½ cup water
- Crunchy Granola Topping (recipe follows)
Combine apples, pears, dates, cinnamon, cardamom, vanilla bean seeds, salt and water in a soup pot. Bring to a boil, then simmer covered for 30 minutes. Remove cover; simmer for 5 more minutes to thicken the sauce. Top with Crunchy Granola Topping.
