Ingredients

  • 2 teaspoons chili powder
  • 2 teaspoons brown sugar
  • 2 teaspoons dry mustard
  • 2 teaspoons coriander
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 6 bone-in pork rib or loin chops (3/4- to 1 1/2-inches thick)
  • Salt, to taste
  • High-heat oil spray

Directions

Combine chili powder, sugar, mustard, coriander, garlic powder and black pepper in a small bowl. Coat chops evenly with spice mixture, cover and refrigerate for at least 1 hour and up to 4 hours.

Heat the grill to medium. Remove chops from the refrigerator while the grill is heating and allow them to come to room temperature, about 20 minutes.

Season chops with salt and spray with oil. Grill, turning once, until the internal temperature reads 145° F, 12 to 15 minutes.
