- 1/4 cup olive oil
- 2 limes, juiced
- 1 clove garlic, chopped
- 1 teaspoon salt, or to taste
- 1/2 teaspoon pepper
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped chives
- 4 large tomatoes, diced
- 2 English cucumbers, diced
- 1 bunch green onions, sliced
In a large bowl, whisk together olive oil, lime juice, garlic, salt and pepper. Add mint, parsley and chives.
Add cucumbers, tomatoes and green onions to the bowl. Toss and serve.
