Ingredients
- 6 to 8 beets
- 1 red onion, quartered and sliced thin
- 1 cup raspberry vinegar
- Salt, to taste
Directions
Steam beets in a pot until tender. Slip off peels under cool running water while beets are still warm. Cut into bite-size pieces. Toss with red onions, vinegar and salt.
Serve at room temperature or chilled.
