- Coconut oil
- 4 peaches, halved and pitted
- Vanilla Berry Sauce (recipe follows)
- Coconut cream
- Raw honey (optional)
- Vanilla Berry Sauce
- 2 cups berries
- 1 teaspoon minced fresh ginger
- ½ vanilla bean, seeded or vanilla bean powder or extract
Heat grill to medium heat and coat lightly with coconut oil (or neutral-tasting oil). Add peaches (cut side down) and grill for 5 to 7 minutes. Remove from the heat and serve with sauce, coconut cream and honey.
Vanilla Berry Sauce
Add berries, ginger and vanilla bean seeds to a saucepan and bring to simmer. Mash fruit and cook on medium-low heat for 10 to 12 minutes, stirring occasionally. Let cool.
