Grilled Peaches with Vanilla Berry Sauce

  • Coconut oil
  • 4 peaches, halved and pitted
  • Vanilla Berry Sauce (recipe follows)
  • Coconut cream
  • Raw honey (optional)
  • Vanilla Berry Sauce
  • 2 cups berries
  • 1 teaspoon minced fresh ginger
  • ½ vanilla bean, seeded or vanilla bean powder or extract


Heat grill to medium heat and coat lightly with coconut oil (or neutral-tasting oil). Add peaches (cut side down) and grill for 5 to 7 minutes. Remove from the heat and serve with sauce, coconut cream and honey.

Vanilla Berry Sauce

Add berries, ginger and vanilla bean seeds to a saucepan and bring to simmer. Mash fruit and cook on medium-low heat for 10 to 12 minutes, stirring occasionally. Let cool.
