- 4 beets, peeled and grated
- 1 orange, peeled and diced
- 1/2 cup plus 2 tablespoons fresh orange juice
- 2 tablespoons fresh lemon juice
- 1 teaspoon orange zest
- 1/2 teaspoon lemon zest
- 1/4 teaspoon salt
- Chopped fresh parsley or cilantro (optional)
Toss together beets, diced oranges, orange juice, lemon juice, orange zest, lemon zest and salt. Refrigerate for at least 30 minutes, tossing at least twice.
Served garnished with parsley or cilantro.
