- 1 bunch arugula
- 1 grapefruit
- 1/2 cup olive oil
- 1/4 cup fresh-squeezed orange juice
- 1/2 teaspoon fresh orange zest
- Salt and pepper, to taste
- Slivered almonds (optional)
Wash and drain arugula, separating it into leaves. Peel and section grapefruit. Slice into bite-size pieces.
In a small bowl, whisk oil, juice, zest, salt and pepper.
In a large bowl, dress salad to your preference and add grapefruit pieces. Garnish with slivered almonds if desired.
