Chilly Gazpacho

  • 3 large tomatoes, chopped
  • 1/2 small cucumber, diced
  • 1/2 small green or yellow pepper, chopped
  • 1 green onion, finely chopped
  • 1 garlic clove, minced
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons lemon juice, or to taste
  • 2 tablespoons olive oil
  • 1 tablespoon fresh cilantro, minced
  • 1 tablespoon fresh parsley, minced
  • Salt and pepper, to taste


Put the tomatoes, cucumber, green pepper, green onion, garlic and red pepper flakes in a food processor and lightly pulse together. Alternately, mix the ingredients by hand in a bowl, making sure to break down some of the tomatoes.

Place the tomato mixture in a medium bowl and stir in the lemon juice, olive oil, cilantro, and parsley. Season to taste with salt and pepper.

Chill at least an hour before serving.
