- 2 cups short-grain brown rice
- 4 cups water
- 1 cup whole milk or almond milk
- 3/4 cup honey
- 1/2 teaspoon vanilla extract
- 4 Satsuma oranges, peeled and segmented
Combine rice and water in a saucepan over high heat; bring to a boil. Reduce to a simmer, cover and cook until water is absorbed and rice is tender, 20 to 25 minutes.
Stir in milk, honey and vanilla. Cook, stirring, until most of the milk is absorbed, about 5 minutes. Divide pudding between serving bowls and garnish with orange segments.
