  • 4 cups packed arugula
  • 3 cloves garlic, peeled and smashed
  • 3 tablespoons grated Parmesan cheese
  • 3 tablespoons toasted, chopped walnuts
  • 1 tablespoon lemon juice
  • 1/2 teaspoon lemon zest
  • Pinch of red pepper flakes
  • 1/3 to 1/2 cup extra virgin olive oil
  • Salt and pepper, to taste


Place arugula, garlic, cheese, walnuts, lemon juice, lemon zest and red pepper flakes in a food processor. Pulse until fine, scraping down the sides of the bowl as needed. With the machine running, pour in olive oil until a fine paste is made. Season with salt and pepper.
