Preparation

Rinse, drain and cover 1 cup quinoa with 1 1/2 cups water and a pinch of salt. Bring to boil, reduce to simmer, cook covered 10-15 minutes. Let rest for a few minutes, and then fluff with a fork before serving.

Yield: about 1/2 cup per 1/4 cup uncooked quinoa.

Comment

Pronounced Keen-wa. Native to the high Andes of Peru and Bolivia. Quinoa has the highest protein of any grain with an amino acid profile similar to milk. Choose for its light texture. A complete protein with more high quality protein than any other grain.
