Learn to craft this regional cuisine: bake polenta, braise meat, broil bell peppers, and craft bagna cauda, a rich garlic-anchovy dip that originated in Piedmont in the 16th century. Savor these cultural flavors in-class, then put the skills you learn to use at home.
